Cauliflower Couscous


I love this curious cruciferous – mostly raw – but many don’t. Well you naysayers, this might just convert you.

Just chop it raw and pulse in a food processor until it resembles couscous, and use straight away. Ideal for a no carb or paleo diet. Alternatively, steam it for a few minutes and you have more of a rice.

Eat it in one sitting ideally, or cover tightly. It emits some serious smells in the fridge…
